I usually pass on anything that’s sweet. Yes, I don’t like cake, ice cream or cookies but I eat everything else. Literally. Of course there are a few exceptions and my guilt free guilty pleasure is my sweet honey, brown sugar and dill glazed carrots. Sure rice, steamed broccoli or mac and cheese are all good sides but there’s a plethora of inexpensive and fresh side dishes to accompany any meal. This 15-minute side dish is healthy, inexpensive and almost too easy to make on any given day.
For this recipe I used fresh whole carrots that I peeled and chopped myself but if you would prefer using whole baby carrots, go right ahead. One bag of baby carrots would require you to double the sauce ingredients of this recipe.
Everyone should have a good honey in their kitchen at any given time. It doesn’t have to be a $20 bottle but something natural with a long shelf life. I used a simple $3.99 organic honey from Aldi so they are just about everywhere.
Ingredients:
- 2 tablespoons of unsalted butter
- 4 cups of carrots (6 big carrots or one bag of baby carrots)
- 2 tablespoons of honey
- 2 tablespoons of brown sugar
- 1 1/2 tablespoon of chopped fresh dill

- If you are using whole carrots, peel and cut your carrots and add them to a bowl. If you are using baby carrots, just take them out of the bag, give them a rinse and put them in a bowl.
2.In a large skillet, melt butter on medium heat. You just want to melt the butter, NO BURNING YOUR BUTTER! It will literally change the entire flavor of the dish if you over cook it. Add your carrots and cook for 5 minutes until they begin to cook.
3.Add your honey, brown sugar and fresh dill. Cook for an additional 10 minutes until carrots are cooked through and tender.
4.Serve immediately because they are oh so delicious when they are still hot and gooey. Garnish with more fresh dill for more flavor and color.
